Background
Snow Oven is a bingsu specialist Minseo opened in Seongsu three years ago. June through August is a genuine phenomenon — queues around the block, 180 to 220 bowls a day, a short aggressive summer that covers most of the lease. The trouble is April-May and October-November. In her first two years, those four months averaged 42 bowls a day. She watched her summer margin dissolve in the shoulders.
What we tried
The instinct was to keep selling bingsu year-round. We argued against it. Bingsu in April does not feel like April. Instead we built a seasonal rotation: March-May "봄 말차딸기 팩" (matcha mochi waffle + a small strawberry milk jar, ₩9,500), and October-November "가을 감 팩" (roasted persimmon tart + a warm rice drink, ₩10,500). Bingsu stayed on the menu but was not pushed. The shoulder menu was joayo-exclusive and refreshed every two weeks with small tweaks.
What happened
Spring 2026 numbers, five weeks in: 108 bowls-or-packs a day on average, with packs outselling bingsu 3.2 to 1. April-May revenue was 2.3× the same weeks in 2025. More interesting: the shoulder customers skewed older than summer crowds (early-30s office workers vs. summer's late-teen and early-20s students), and they spent 18% more per ticket because they added drinks and a second pack to take home.
The unexpected upside
Minseo expected the seasonal packs to cannibalize summer. They did not. Summer 2025's bingsu numbers held, and early bookings for summer 2026 are tracking 11% ahead. The shoulder menu seems to have expanded the store's audience without trading any of the core crowd.

What's next
Snow Oven is now planning a December-February "warm bowl" — a single warm dessert course limited to winter. If the pattern holds, Minseo will have four distinct six-to-eight-week seasons instead of one long summer and nine quiet months.
